# Healthy Vegetable Hakka Noodles

Enjoy a healthier take on classic Indo-Chinese Hakka noodles made with whole wheat noodles, colourful vegetables, and a light homemade sauce. This fibre-rich recipe is quick to prepare, loaded with fresh ingredients, and perfect for a nutritious lunch or dinner.

 

## Ingredients (Serves 2)

 

 

### For the Noodles

- 150 g Whole Wheat Hakka Noodles

- 2 tsp Sesame Oil or Olive Oil

- 1½ Litres Water

- ½ tsp Salt (for boiling)

### For the Vegetables

- 1 Medium Carrot, julienned

- 1 Cup Shredded Cabbage

- 1 Medium Capsicum, thinly sliced

- 8–10 French Beans, thinly sliced

- 4 Spring Onions (whites & greens separated)

- 4 Garlic Cloves, finely chopped

- 1-inch Ginger, finely chopped

- 1 Green Chilli (optional)

### For the Sauce

- 2 tsp Low-Sodium Soy Sauce

- 1 tsp Green Chilli Sauce

- 1 tsp Rice Vinegar

- 1 tsp Tomato Ketchup (optional)

- ½ tsp Freshly Ground Black Pepper

- ¼ tsp White Pepper (optional)

### For Garnishing

- 2 tbsp Spring Onion Greens, chopped

- 1 tsp Roasted Sesame Seeds (optional)

## Method

### Step 1: Cook the Noodles

- Bring 1½ litres of water to a rolling boil and add salt.

- Add the whole wheat noodles and cook according to the package instructions until just tender.

- Drain the noodles and rinse with cold water to stop the cooking process.

- Toss with 1 teaspoon oil to prevent sticking and set aside.

### Step 2: Prepare the Sauce

- Combine soy sauce, green chilli sauce, rice vinegar, ketchup, black pepper, and white pepper in a small bowl.

- Mix well until the ingredients are evenly combined.

### Step 3: Stir-Fry the Vegetables

- Heat the remaining oil in a wok or large pan over high heat.

- Add garlic, ginger, green chilli, and spring onion whites.

- Sauté for about 30 seconds until aromatic.

- Add carrots, beans, capsicum, and cabbage.

- Stir-fry on high heat for 3–4 minutes so the vegetables stay crisp and colourful.

### Step 4: Combine Everything

- Add the cooked noodles to the vegetables.

- Pour in the prepared sauce.

- Toss gently until every strand is evenly coated.

- Cook for another 2–3 minutes on high heat.

### Step 5: Garnish & Serve

- Turn off the heat.

- Top with fresh spring onion greens.

- Sprinkle roasted sesame seeds for extra crunch (optional).
